Beer Mussels

Sed ut perspiciatis unde omnis iste natus error sit voluptatem accusantium doloremque laudantium, totam rem aperiam, eaque ipsa quae ab illo inventore veritatis et quasi architecto beatae vitae dicta sunt explicabo. 

  • Mussels (frozen)
  • Broth
  • Beer (Stella)
  • Pub Style Mustard
  • Parsely
  • Lemon
  • Bacon, diced (4 or 5 strips, I use Occar Meyer Butcher Cut)
  • Butter
  • Large Tomato
  • Sm. Onion
  • Heavy Cream
  • Worchestershire
  • Red Pepper Flakes
  • Salt & Pepper

 

  • French Fries (frozen)
  • Mayo
  • Roasted Garlic
  • Pepper
  • Parsely
  • Parmasean 

 

Cook bacon & set aside. Add onion & garlic to bacon grease and cook over medium heat until transluscent. Add mustard, red pepper flakes, worchestershire, and tomatoes & gently stir. Add beer and broth and continue to simmer until reduced by about half. Check for seasoning. 

Cook mussels in seperate pan. 

Add cream, butter, lemon & parsely to broth. Add mussels & toss to coat and gently warm. Remove from heat & sprinkle with bacon plus more parsely for garnish. 

Aioli. Confit Garlic. Add all ingredients to food processor & whiz until combined (I like garlic chunks) Garnish with parsely.
